These cupcakes were made for the birthday of a Jammie Dodger obsessed friend, Fred, Jess’s Fiance. I think they went down well. What could be more pleasing to a Jammie Dodger fan? Jam filled vanilla cupcakes topped with creamy vanilla ‘butter’cream and topped with an entire Jammie Dodger! Yum!

The cupcake recipe I used was the Jelly Donut Cupcakes from Veganomicon. I like to use natural custard powder instead of plain cornstarch, it gives a lovely golden colour. Also, you don’t need the dusting of powdered sugar.

I then made a simple ‘butter’cream by whizzing 100g vegan spread with 200g icing sugar and 1/2 tsp vanilla paste (or extract) until smooth and creamy and piped a blob on each cupcake and topped them off with a Jammie Dodger.
